CAULIFLOWER GRATIN




 Ingredients :
Butter, for greasing
800 g / 3 cups cauliflower florets, rinsed
100 ml / scant 1/2 cup whipping cream 100 ml / scant 1/2 cup milk
60g / 2/3 cup Emmental cheese, grated 2 eggs
Nutmeg
2 slices white bread, crusts removed, chopped
Salt and freshly ground pepper

Method : Prep and cook time: 40 min
1      Preheat the oven to 200C (400F / Gas Mark 6).
2      Grease an ovenproof dish or pan with butter.
3      Blanch the cauliflower florets in boiling salted water for about 2 minutes. Drain, refresh in cold water, drain again and place in the greased dish.
1      Whisk together the cream, milk, cheese and eggs, season with salt, pepper and nutmeg and pour over the cauliflower.
2      Scatter the bread over the cauliflower and bake in the preheated oven for about 25 minutes.
