  • Heat oil in a fry pan. Once its hot, add asafoetida and cumin seeds.
  • As cumin seeds starts to change color, add the ginger and green chillies. Stir for 15-20 seconds.
  • Add the onions and stir fry until translucent. Then add the okra. Stir fry for 3-4 minutes.
  • Except Salt; add all the dry spices. We are going to add the salt in the end so that the okra doesn't turn slimy.
  • Mix well and let okra cook on medium low heat while stirring in between until its tender.
  • Once the okra is tender, add the tomatoes and salt. Mix well.
  • Cook it for 2 more minutes only as we don't want tomatoes to go mushy. Switch off the gas.
