Cocido - spanish-style stew
You know the French pot-au-feu, don't you? This soup with vegetables and beef cooked for a long time and which makes us happy during the cold days of winter. Today, vary the pleasures by trying its Spanish cousin: the Cocido! This flavorful stew will be made here with chicken, serrano ham, vegetables and chickpeas. A complete dish that the whole family will enjoy :-) To make it at home, follow the steps explained below.

Preparation
Boil the water in a saucepan. Add the salted bone, the chicken, the serrano ham and the bacon, cover and cook over medium heat for 1h30.
After 45 minutes, take the lid off and remove the foam. Re-cover and let finish cooking.
Add the rest of the ingredients: carrot cut into slices, potato and flat beans in pieces, cooked chickpeas and salt. Stir and cook over medium heat for another 30 minutes.
Serve the meat on a plate.
And in individual soup plates the rest of the Cocido. It's ready !
Observations
>> If you have broth left, you can make a soup with noodles (angel hair type)
>>Feel free to keep a few chickpeas aside that you will crush and then mix with the meat, salt, pepper, oil and vinegar. Don't forget to dip some bread in it ;-)
>>Store the Cocido in the refrigerator once cooled. If you leave it at room temperature, it may develop too strong flavors.
