2 pizza doughs: homemade or frozen

1 pound lean ground beef or lamb

salt and a lot of black pepper

1/4 teaspoon cinnamon

1 large onion chopped

1 garlic clove chopped thin or minced

1/2 cup red wine

1/2 cup tomato sauce or 1 tomato chopped

10-20 Greek olives pitted and crushed slightly.1/4 -1/2 cup feta cheese

optional: 1/4 cup eggplant diced


  • Preheat oven to 550 and place the rack on the second to last row. Place a stone on the rack below this rack to ensure even heating.
  • Spread a lot of corn meal on to a large rectangular sheet pan, this ensures the pizza will not stick.
  • Spread out one of the pizza doughs to fit it. Now spread out the second piece and reserve, no rolling pin was needed.
  • Heat up a large saute pan and add olive oil to coat bottom. Saute the onions (add salt and pepper to taste and cinnamon at this point) and eggplant if using until soft and golden.
  • Push aside and add the meat to saute until cooked. Add the tomatoes and cook for several minutes. Add the wine and cook for 3-4 minutes on medium high heat. You don't want it too liquidy.
  • Add the olives and turn off heat. Dump it on to the bottom crust leaving an edge. Add the cheese. Add the top piece. Fold and press the edges. Make 4 slits and brush olive oil on.
  • Bake for 10-15 minutes or until golden brown. Brush more olive oil on and allow it to cool for 5-10 minutes before slicing.
