Japchae/Chapchae (Korean Glass Noodles)
Preparation

Cook noodles according to package. In a saute pan, heat oil, add garlic and onions, cook until onions begin to sweat and caramelize.

Add mushrooms, carrots, and saute for 30 seconds. Add Spinach and cook until wilted.

Add the noodles and soy sauce, sugar, salt, and pepper. Stir fry the noodles for 2-3 minutes until well combined with the rest of the ingredients.

Sprinkle with sesame seeds.
