Melting Moments Cookies with Nutella Filling

Source: Worldwideweb and filling concept ( nutella ) I adapted from my friend Savi..
Ingredients :Cookies250g unsalted butter, cubed and at room temperature
55g pure icing sugar, sifted
1 tsp pure vanilla extract
260g plain/all-purpose flour
50g cornflour/corn starch
Filling : Nutella elseFilling : Butter Cream 60g butter, at room temperature
1 tsp pure vanilla extract
Zest of 1 orange
110g pure icing sugar, sifted
Method :Preheat the oven to 325 deg F. Line the baking tray with parchment paper.Beat the butter , icing sugar , vanilla extract until pale and creamy . Add the sifted flour and corn flour to the butter and beat it in the lowest speed just to combine everything . Then use ur hand to form the dough .. ( do not over work the dough )Slightly flour ur hands and pinch out small balls from the dough and make fine smooth balls and place it in the parchment paper an inch apart.. Lightly flour ur fork and flatten each ball to 1 cm thick .Bake in the preheated oven to 15 minutes or until it turns very pale creamy colour .. ( Do not brown them ..)Leave the cookies on the tray itslef once they are out of the oven as they are so delicate and trying to move them make them turned into crumbs.Always do in batches and continue to work on the remaining dough..To make filling :Beat the butter , vanilla, orange zest in a bowl until pale and creamy . Now add the icing sugar and beat till just combined /blend. Cover with a plastic wrap and keep inside the fridge until they are ready to use.Never apply the filling on the warm cookies as the filling would melt.To assemble cookies :Spread half a tsp of filling ( in my case, it's nutella ) onto the base of one cookie in the center and sandwich with an another cookie. Just give a light press on the cookie and that will spread the filling uniformly in a circular way.Keep the cookies filled with Nutella inside the refrigerator for 10 mins and relish.U may have it right away even without refrigerated.
