Coconut currant butter cookies

Ingredients

- 125 g butter
- 125 g cake flour
- 25 g corn starch
- 25 g dessicated coconut
- 40 g icing sugar
- ½ teaspoon baking powder
- 40 g currants
- 1 egg
- 60 g sugar

Preparation

Step 1

Preheat oven to 160 /180°C.

Step 2

Melt butter and let it cool down.

Step 3

Mix cake flour, corn starch, coconut, icing sugar, and baking powder together. Then mix in currants.

Step 4

Beat egg with sugar on high speed for 5 minutes.

Step 5

Mix flour mixture with melted butter. Pour in 1/3 of beaten egg into (5) and combine well.

Step 6

Pour in another 1/3 and combine and lastly repeat with balance of eggs.

Step 7

With 2 small spoon, take 1 tsp of the dough and form balls and put onto baking tray.

Step 8

Bake for 14 minutes or until golden. Cool on wire rack and keep air tight.

I think i will add a little bit more of the sugar and coconut simply because of my preference of sweetness and for the loves of coconut. But overall your recipe is perfectly simple and delicious. Thank you for sharing the recipe:-)
