- Cream butter and sugar, beat till light and fluffy.
- Add lemon zest, poppy seed and sifted flour. Mix until combined.
- Roll into small balls, place onto baking sheet. Flatten with a slightly damped spoon or a fork dipped in water.
- Bake in preheated oven at 170C for 13-15min or until lightly brown.
- Let cookies stand in baking tray for 2-3mins.
- Transfer cookies onto a wire rack with a spatula or knife, let it cook completely before storing.
