110 g caster sugar
275 g plain flour
2 lemon zest
2 tablespoons poppy seeds

Cook time20 min

Cream butter and sugar, beat till light and fluffy.
Add lemon zest, poppy seed and sifted flour. Mix until combined.
Roll into small balls, place onto baking sheet. Flatten with a slightly damped spoon or a fork dipped in water.
Bake in preheated oven at 170C for 13-15min or until lightly brown.
Let cookies stand in baking tray for 2-3mins.
Transfer cookies onto a wire rack with a spatula or knife, let it cook completely before storing.
