225 g butter

110 g caster sugar

275 g plain flour

2 lemon zest

2 tablespoons poppy seeds


  • Cream butter and sugar, beat till light and fluffy.
  • Add lemon zest, poppy seed and sifted flour. Mix until combined.
  • Roll into small balls, place onto baking sheet. Flatten with a slightly damped spoon or a fork dipped in water.
  • Bake in preheated oven at 170C for 13-15min or until lightly brown.
  • Let cookies stand in baking tray for 2-3mins.
  • Transfer cookies onto a wire rack with a spatula or knife, let it cook completely before storing.
