Lemon and oat brownies with a delicious glaze that will make you go back for another piece until it's all gone! :) An ideal dessert to take to a gathering with friends or family, and also a healthier option using oats instead of flour.

- Electric or manual whisks (preferably electric)
- Rectangular mold (14 x 22 cm)

Blend the rolled oats. Whisk (preferably electric) the blended oats with sugar, salt, and softened butter.
Add eggs, lemon zest, and lemon juice. Mix for 2 minutes.
Grease the mold with butter and bake for 23-25 minutes at 180°C (350°F). Let it cool.
For the glaze: Place the icing sugar in a bowl and gradually add the lemon juice while mixing until you achieve a light texture.
Incorporate the lemon zest.
Pour over the brownies and spread carefully, as the top of the brownies is somewhat delicate.
Let the glaze dry, and you're done!
Observations
- You can make this with any other type of crushed cereal (as a substitute for flour). You can also use conventional flour.
- You can customize the flavor and change the type of citrus. You can make it with orange, lime, or grapefruit.
- When you finish mixing the batter, it may look a bit curdled, but that's okay. It's the reaction of the lemon juice with the butter. When it comes out of the oven, it will be perfect!
