With all the fresh ingredients, this salsa is very refreshing and super delicious!!

Ingredients

• 2 big mangoes (Alphonso)
• 1 green capsicum
• 2 tomatoes
• 1 onion
• few mint leaves
• 1 Pomegranate
• 1-2 cucumbers
• few almonds (chopped)
• For Dressing
• Juice of 1 orange
• handful of coriander leaves
• 2 tablespoon honey
• 1 tablespoon lemon juice
• 1/4 teaspoon ginger juice
• salt and pepper (to taste)

Preparation

• Roast the capsicum on direct flame till it is black on outside. When done, peel it and chop it.
• Chop all other vegetables and fruits as well. Put all in a salad bowl. Keep aside.
• For dressing, blend together coriander leaves with orange juice. Add lemon juice, ginger juice, honey, salt and pepper to the dressing.
• Pour the dressing on the vegetables and fruits. Mix well and refrigerate.
