Mango salsa with roasted capsicum
With all the fresh ingredients, this salsa is very refreshing and super delicious!!
Ingredients
Number of serving: 6
1 green capsicum
1-2 cucumbers
few almonds (chopped)
For Dressing
Juice of 1 orange
handful of coriander leaves
2 tablespoon honey
1 tablespoon lemon juice
1/4 teaspoon ginger juice
salt and pepper (to taste)
Preparation
- Roast the capsicum on direct flame till it is black on outside. When done, peel it and chop it.
- Chop all other vegetables and fruits as well. Put all in a salad bowl. Keep aside.
- For dressing, blend together coriander leaves with orange juice. Add lemon juice, ginger juice, honey, salt and pepper to the dressing.
- Pour the dressing on the vegetables and fruits. Mix well and refrigerate.
