Mango salsa with roasted capsicum


With all the fresh ingredients, this salsa is very refreshing and super delicious!!

Ingredients

2 big mangoes (Alphonso)
1 green capsicum
2 tomatoes
1 onion
few mint leaves
1 Pomegranate
1-2 cucumbers
few almonds (chopped)

For Dressing
Juice of 1 orange
handful of coriander leaves
2 tablespoon honey
1 tablespoon lemon juice
1/4 teaspoon ginger juice
salt and pepper (to taste)

Preparation

Step 1

Roast the capsicum on direct flame till it is black on outside. When done, peel it and chop it.

Step 2

Chop all other vegetables and fruits as well. Put all in a salad bowl. Keep aside.

Step 3

For dressing, blend together coriander leaves with orange juice. Add lemon juice, ginger juice, honey, salt and pepper to the dressing.

Step 4

Pour the dressing on the vegetables and fruits. Mix well and refrigerate.
