- Boil the water into the pot, in a medium heat.
- Pour the corn grits.
- When the corn is boiling, turn the heat down to medium low and cover the pot.
- After the corn grains have been cooking for a few minutes, check for holes or “craters.”
- When you see the holes or craters, cover the pot and turn the heat to low.
- Simmer it for another 15 minutes.
- Serve it hot.
