  • Boil the water into the pot, in a medium heat.
  • Pour the corn grits.
  • When the corn is boiling, turn the heat down to medium low and cover the pot.
  • After the corn grains have been cooking for a few minutes, check for holes or “craters.”
  • When you see the holes or craters, cover the pot and turn the heat to low.
  • Simmer it for another 15 minutes.
  • Serve it hot.
