Pease Pudding

Pease Pudding is one of the old dishes that just makes me smile, simple food and this is my version. Really easy recipe to follow, I?m using dried lentils instead of split peas so they need to be blanched first. I?ve also used a mixture of green and red lentils, the green hold their shape and texture far longer than the red so you get that mushy goodness of the traditional Pease pudding with some lovely earthy shots of green lentils going through it. This really is one pot cooking at its easiest. Just prep your stock veg of shallots, celery and carrots throw in your blanched lentils and ham, whether you go smoked or not it?s up to you. If you?ve gone for a well smoked or just any ham you know is going to be really salty maybe think about giving that bad boy a bath in some cold water for a couple of hours to draw out some of the saltiness otherwise the end dish is going to be overpoweringly salty. I just use ground white pepper to season at the end to lend some warmth. Cook in the one pot skimming off any scum that comes to the top until the ham is cooked through and the red lentils have given up their shape and you are done.

Ingredients:
Ham.
Dried Lentils or Peas.
Stock Veg ? Carrots, Celery, Onion or Shallot.
Water - to cover.
