Soak the gelatin sheets in cold water.
In a pot, combine the sugar, water, and lemon extract. Bring to a boil, insert the thermometer into the mixture, and wait until it reaches 115°C (240°F).
Remove the pot from the heat and add the well-drained gelatin. Mix well. Divide this mixture in half, and add yellow food coloring to one half. Mix well.
Using a paper towel soaked in oil, grease your half sphere molds. Pour the yellow mixture in small amounts. (If the mixture has hardened too much, gently reheat it in a bain-marie.) Let it dry overnight.
Wipe the silicone tray with an oil-soaked paper towel (or a regular tray lined with parchment paper). Heat the uncolored mixture that has hardened for 30 seconds in the microwave.
Pour this mixture into a bowl and whip it as you would for meringue. The mixture should double in volume.
Using a piping bag, form small mounds of the white mixture. Lightly oil your fingers and unmold the yellow half spheres.
Place each yellow half sphere on a small white mound, pressing lightly. Let dry for 2 hours.
Mix the cornstarch and icing sugar, then brush the candies with this mixture to prevent them from being sticky.
And there you have it, your gummy fried eggs are ready!
Observations
Flavoring: Feel free to use the flavoring of your choice.
