Soak the gelatin in cold water.
Put the water and sugar in a saucepan and bring to a boil. Using a thermometer, the temperature should reach 260°F/130°C (or boil for about 5 minutes).
Start beating your egg white.When the syrup has reached the right temperature, drizzle it over the egg white while continuing to beat at low speed. After pouring in the syrup, add the wrung-out gelatin.
While continuing to beat, add the grenadine and a little food coloring. Continue beating until the mixture is lukewarm.
Mix the cornstarch with the icing sugar. Sprinkle this mixture onto a silicone baking tray or dish.
Using a piping bag, pipe the marshmallow into large shapes. If you don't have one, pour the marshmallow directly into a dish covered with the cornstarch-icing sugar mixture. Then sprinkle the marshmallow with the cornstarch-icing sugar mixture, and chill for 3 hours.
After this time, peel off the marshmallow strands and cut them into pieces.
Your marshmallows are ready! Store them in an airtight container.
