- Crush the pink peppercorns. In a bowl, mix the sugar with the salt, crushed pink peppercorns and dill.
- Pour half of the preparation into a glass tray and place the salmon fillet (skinless and without bones) on top. Cover the salmon with the remaining preparation (salt + sugar + dill + pink pepper). Now cover with film and place the tray in the refrigerator for 24 hours.
- Remove any water and place in the refrigerator for another 24 hours.
- After this time, rinse the salmon fillet to remove the remains of the marinade.
- All that remains now is to cut the salmon fillet into thin slices.
- Sprinkle with pink peppercorns and dill sprigs. Add a drizzle of lemon juice (optional) and serve.
