Crush the pink peppercorns. In a bowl, mix the sugar with the salt, crushed pink peppercorns and dill.
Pour half of the preparation into a glass tray and place the salmon fillet (skinless and without bones) on top. Cover the salmon with the remaining preparation (salt + sugar + dill + pink pepper). Now cover with film and place the tray in the refrigerator for 24 hours.
Remove any water and place in the refrigerator for another 24 hours.
After this time, rinse the salmon fillet to remove the remains of the marinade.
All that remains now is to cut the salmon fillet into thin slices.
Sprinkle with pink peppercorns and dill sprigs. Add a drizzle of lemon juice (optional) and serve.
