I love stuffing dosa more...like my cauliflower roast,Paneer Potato masal roast n mushroom roast heres another special dosa variety...Tomato roast/Thakkali Roast.My cousin sister use to make this tomato dosa, but i forgot her recipe n tried it in my own way with freshly grounded spices...mild tangy,little spicy and was excellent with dosa.My kutties,like me they also love stuffed/spread dosa than regular dosa with chutney or sambar.This time i served with some onions,chopped cilantro n lemon drops that add more taste n flavor...wow...too good.Try this !!!

IngredientsDosa batter for making dosaOnion 1 medium(sliced)Tomato 2 large (diced)Garlic 2 flakes(crushed)Ginger 1" piece(crushed)Curry leaves fewChilli powder 1/2 tspTurmeric powder a pinchCoriander leaves 1handful (finely chopped)Salt to tasteOil 2 tspTo dry roast and powderChana dal 2 tspCinnamon 2" stickClove 3 no.sFennel seeds 1 tspPoppy seeds 1/2 tspJeera/Cumin seeds 1/ tspPepper corns 10-15 no.sCardamom 1 no.Dry coconut powder 1 and 1/2 tspMethodHeat a pan and add all the ingredients under "dry roast n powder" one by one and roast them lightly till chana turns light golden color. And allow to cool and grind it to a fine powder and keep aside. Heat oil in a pan/wok,add mustard and 1/4 tsp fennel seeds and wait till it pop and add the crushed garlic and ginger,curry leaves and fry lightly .Then add sliced onions,sprinkle some salt and fry till onion turns pink . After that add,diced tomatoes,turmeric powder and chilly powder and saute till tomaot gets soft and mushy. And now add the roasted spice powder and enough salt,give a nice mix and cook covered for 1-2 minutes. Lastly add some finely chopped coriander leaves.Tangy and spicy tomato masala is now ready for tomato Roast. Heat a tawa,when its hot pour a ladle of dosa batter and spread in circular motion,keep 2-3 spoons of tomato masala in the centr and spread lightly...cover the dosa with a lid and cook till dosa gets cooked n turn crisp.Thats it...tomato roast is now ready ...serve with some finely chopped onion,cilantro and few lemon drops.
