#1721 - Vanilla Ice Cream Cake
(by Shirley McNevich) 60 Ritz crackers (crushed) 1 stick butter (melted) 1 1/2 cups milk 2 - 3oz. boxes Jell-O vanilla INSTANT pudding 2 quarts premium vanilla ice cream (softened) crushed peanuts (optional) In a bowl add crushed crackers and melted butter--stir. Press the cracker mixture into the bottom of a 9 x 13 metal cake pan. In a mixer add milk and both vanilla pudding mixes----beat on low until mixed. Scoop all of the softened vanilla ice cream into the pudding mixture--beat until smooth. Pour the ice cream mixture over the cracker crust. Sprinkle crushed peanuts over the top. Freeze overnight.
