Achari Chana Pulao
Achari Chana Pulao Ingredients 1 cup Chickpeas 1 cup Oil 3 cups Rice 4 Finely sliced onion 4 Lemon 8 Sliced green chilies 8 Bay leaves 1 bunch Sliced mint 1 tsp White cumin 1 tsp Brown sugar 1 tsp Nigella seeds 1 tbsp White vinegar 1 tbsp Ginger garlic paste 1 tbsp Red chili flakes 1 tbsp Mustard seeds ½ tbsp Crushed black pepper Salt to taste Method Boil a cup of soaked chickpeas. Add a bunch of finely chopped mint, salt to taste, 2 green chilies and a tbsp of white vinegar to 3 cups of rice. Boil rice until 1/3 cooked. In a cooking pot, add some oil and sauté onion. In half of the sautéed onion, add 1 tbsp ginger garlic paste, lemon juice, chick peas, 1 tbsp red chili flakes and 1 tbsp mustard seeds and sauté. Now put remaining green chilies, 1 tsp of brown sugar and 8 curry leaves. Grease the bottom of a separate pan add a layer of half of the rice Then add a layer of chickpeas. Add lemon juice and mint. Spread the remaining rice and top with mint leaves and squeeze the juice of a lemon.Cover and simmer for 5 minutes.
