Another Shepherds Pie
I was sort feeling in a cooking rut. The holidays are long over...I haven't made anything really new or different. I'm in the same old routine... I was going to make something simple...Hamburger Helper to be exact. And not that there is anything wrong with that, I was just wanting something....different. I had the ground turkey. I had some frozen veggies. I had a box of instant potatoes. So I've decided to make another shepherds pie. Here's what you need: 1lb ground turkey 1/2 cup chicken stock I used frozen cauliflower and broccoli (the green giant just for one packets - I used two of each - it has cheese in it too) frozen corn and frozen beans (you can use canned if that's what you have on hand) salt/pepper to taste, season salt, oregano 2 cloves fresh garlic I made enough instant potatoes for 6-7 servings. How to make: brown the ground turkey in a skillet and add the garlic cloves (chopped). Cook until browned. Add the vegetables to the meat and add the chicken broth and seasonings. Cook until vegetables are done. While the meat is cooking get the potatoes ready as directed on package. If you're wanting the fresh potatoes, feel free to make those. Either way it will turn out the same!! Once the potatoes were done I added more garlic, salt and pepper to taste. Once the meat mixture is done, pour into a 9x13 baking dish. Add the potatoes to the top and spread out over the mixture, forming peaks. Bake at 400 degrees for 30 minutes or until potatoes slightly brown. Hope you enjoy. Nothing fancy to change things up during the week but it was quick and easy using all the stuff already in the fridge/cabinet. Have a good week. Happy cooking. Patricia
