Avocado Cream Cheese
Over the holidays I purchased a lot of cream cheese because a.) it was on deep, deep sale and b.) I was sure I was going to make a pumpkin cheese cake. I didn’t make the cheese cake and now I have a lot of cream cheese that I don’t want to waste, so I decided to make some flavored cream cheeses. I always make scallion cream cheese which is so simple you can’t believe it and it’s wonderful on crackers, bagels, smeared on a celery stalk but especially rolled up in thin sliced ham, salami or pepperoni. 1 bunch of scallions This particuar day I also had two avocados that needed to be used and my husband made this one… 2 avocados, peeled and chopped pretty small Put all ingredients in the bowl and mix on low until combined. I was shocked at how good this was and it makes a great spread for sandwiches, crudites, anything really. Bright and salty, but mild and creamy. Just delicious. It’s also a great jumping off place for other recipes. I think next time we’re going to add some sour cream, diced hot pepper (serrano or jalapeno) and use it as a dip, or a topping for taco salad, or to dollop onto a big bowl of chili.Similar Posts: related searches : Avocado
