- Cook spaghetti, following the time indicated on the package.
- Grill Pancetta, then cut it in little pieces
- In a bowl, beat together the eggs, the Pecorino cheese, and 2 tablespoon of the water in which the pasta are being cooked. The mix has to swell a little bit.
- Once the spaghetti are cooked, quickly mix them with Pancetta and the egg mix, to serve immediatly.
- Sprinkle with some remaining Pecorino. Your pasta are ready !
