womp womp. I was on such a high from the nice weather this weekend that waking up this morning had me both shocked and appalled. It is back to the single digits/see-your-breath temperatures this morning and I do not like it one bit. Hmph. I was super pumped, however, that I already had my lunch packed and ready to go this morning. An extra 10 minutes the night before makes a huge difference in the morning I tell ya! I swear by making my lunch the day before… It gives me one less thing to worry about in the morning, which allows me to just reeeelax and enjoy it. Here is what I enjoyed: Pumpkin pie-spiced apple oats. and Almond Butter Apple Yummers! The Oats; I cooked them via stove-top (because I had time thanks to not having to make my lunch I had half an apple left from that, and so this is what I did with it: drooooooooooooooool. this apple was purchased yesterday at the farmer’s market. It is super sweet and crunchy and juicy. I love apples in the fall, they are wonders of the earth I tell ya. Question: Do you make your lunched in the morning or the night before? Do you make your lunches often or do you usually buy your lunch at work/eat at a cafeteria? I make my lunches 98% of the time probably…. As I am the only one that eats veggies in this house, they have to be consumed before they go bad… Therefore, I tend to have veggie-packed lunches Have a great Monday everyone!
