Preparation
Place a pot with salted water on the stove and bring to a boil. Meanwhile, clean the broccoli and retrieve only the florets.
Boil the broccoli for about 12 minutes, adding the garlic clove.
Meanwhile, toast the almonds in a nonstick frying pan.
Once ready, drain the broccoli and garlic with a skimmer (don't throw away the cooking water because you will need it to cook the pasta) and put them in the blender's mug. Then add the grated Parmesan cheese, 2/3 of the toasted almonds (1/3 you will need for decorating the dish), a drizzle of olive oil and a grinding of black pepper.
Blend until smooth.
Cook the pasta in the broccoli cooking water.
Pour the creamed broccoli into the pan used to toast the almonds and dilute with cooking water.
When the pasta is al dente, drain it (always keep some cooking water aside) and pour it into the pan with the broccoli and almond cream.
Mix until the pasta and cream are completely blended. Add some cooking water if the cream seems too thick.
Plate and sprinkle with coarsely ground almonds (the ones set aside earlier). Pasta with creamed broccoli and almonds is ready!
