Fresh butternut pasta with only 2 ingredients
Fresh butternut pasta is the perfect example of a simple, delicious recipe :) With just two ingredients - butternut puree and flour - you can make an easy and original homemade recipe, without the need for sophisticated equipment. Butternut, with its naturally sweet sweetness, gives the pasta a soft texture and a pretty golden color that makes your mouth water just looking at it! You can accompany them with a simple drizzle of olive oil, a little Parmesan or even a knob of butter for maximum flavor ;-)

Preparation
- Remove butternut seeds with a spoon.
- Score the butternut with a knife.
- Season with olive oil, salt and pepper and place the butternut in the oven for one hour at 370°F/190°c.
- When cooked, remove the flesh and blend with the flour to form a paste.
- Wrap the dough in cling film and refrigerate for 30 minutes.
*If your dough is a little sticky, you can flour it a little to make it easier to handle. - Bring a large pot of water to the boil with salt. Cut the pasta with a chisel over the top of the pot and leave to cook.
- When the pasta rises to the surface, drain.
- Melt the butter in a frying pan and add the pasta.
*You can toast the pasta to taste.
- Add pepper and Parmesan and stir.
- And now it's ready!

Can you make this pasta with other vegetables?
Absolutely! You can replace butternut with vegetables such as sweet potatoes, carrots or even broccoli. Just be sure to drain your vegetables well to avoid excess moisture in the pasta.

This pasta goes wonderfully well with a simple drizzle of olive oil and grated Parmesan, or butter. For added flavor, you can also opt for a creamy sauce, homemade pesto or even tomato sauce.

Of course you can! Turn the pasta into gnocchi by rolling out the strands and cutting them into small pieces. Cook until they float to the surface. You can also use a pasta machine to create tagliatelle, ravioli or lasagne sheets. Make sure your dough is well floured to prevent sticking.

If you're not using it immediately, store your pasta in an airtight tin in the fridge for 24 to 48 hours. You can also freeze them: lay them out in a single layer on a floured baking sheet, let them harden in the freezer, then transfer them to a freezer bag.
