Bailey's Chocolate Mud Truffle Cake
What a combination, Bailey's, chocolate and cake, just about three of my favourite things (not that I get to drink any Bailey's these days!). I was given this recipe by a cake friend over at Flickr, Kitty, and decided to try it out over the weekend. This is an unusual recipe as it requires mixing and then resting overnight before baking.
So firstly to the recipe. (The original recipe makes 30 cupcakes) Bailey's Chocolate Mud Truffle Cake Ingredients 500g butter 400g dark chocolate 2 cups hot water 2 1/2 cups castor sugar 1/2 cup Bailey's Irish Cream Liqueur 4 eggs, lightly beaten 3 cups plain flour 1/2 cup dutch cocoa 4 teaspoons baking powder Method 1. Combine butter, chocolate and water over low heat and stir until smooth. Pour into large bowl and set aside for 5 minutes. 2. Add sugar, bailey's and eggs to chocolate mixture and whisk until well combined. 3. Sift flour, cocoa and baking powder into chocolate mixture and whisk well. Cover bowl with a clean teatowel and leave at room temperature over night. It should transform into a gorgeous, thick truffle mixture! 4. The next day give the mixture a stir and pour into a cake tin. Bake at 140C (fan forced) for about 3 hours or so. Or spoon into cupcake pans (about 3/4 full) and bake for about 30 minutes. Note: I halved this recipe and baked in an 8 inch tin for about 3 hours. It made a lovely high cake. The cake turned out great, it is a very rich, luscious cake. A small slice is definately enough, even for a chocoholic like me. I topped it with dark chocolate ganache. ![]() This was the cake I was going to make for my sister's birthday in a few days time, then I received a phonecall on Saturday night about 9pm from my mum to say we were going to have her birthday on Sunday as there was too much going on for us to have it on her real birthday on Tuesday. Normally I would panic, as there would be no time to bake another mudcake and decorate in the morning, so I cut the above cake in half and turned it on it's side and decorated it. Luckily I had some flowers left over from a previous cake, so with some ribbon and embossing the cake was done!! ![]() Everyone was impressed with the rushed cake and it tasted great. Apparently this cake gets better with age and is at it's best on day 3 and 4. I still have a couple of slices so I will be able to test this out for myself. related searches : Bailey
