Bake: Choc Muffins with Cream Cheese Centre
![]() So, what's better than a chocolate muffin? A chocolate muffin with dark chocolate chips ... and white chocolate chips .... and a creamy creamy-cheese centre .... with white chocolate melted through *droool* Ingredients of Mass Dietary Destruction: Cream-cheese centre: 100 g Cream Cheese, softened 2 tablespoons Caster Sugar 1/2 teaspoon Vanilla Essence 90 g White Chocolate melts, melted Muffin: 2 1/4 cups Plain Flour 1/3 cup Cocoa Powder 1 teaspoon Bicarb Soda 2/3 cup Caster Sugar 3/4 cup Milk 1 teaspoon Vanilla Essence 3/4 cup Oil Extra White & Dark Chocolate chips to your hearts desire Makes 12 Method: Preheat oven to moderate 180c. Grease 12 regular muffin holes. Filling: Blend cream cheese, sugar and vanilla in a bowl with electric beaters. Stir in the melted chocolate. Muffins: Sift the flour, cocoa and bicarb soda into a large bowl and add the sugar and chocolate chips. Make a well in the centre. Whisk the milk, vanilla essence and oil together in a jug and pour into the well. Fold gently until just combined- the batter should be lumpy. Assembly: Fill each muffin hole one third full with batter. Place a heaped teaspoon of the filling into the centre of each muffin hole and top with the remaining batter. If filling is too hard, can microwave for 15 seconds to soften. Bake for 20 minutes or until the muffins come away from the side of the tin. Cool briefly then transfer to a wire rack. Optional: Dust with cocoa and icing sugar. Or top with extra chocolate chips Best served warm and delicious! Like you could wait for these babies to cool down anyways ;) related searches : Bake
