Banana simple cake recipe
This is a Banana bread recipe from Tyler Florence, you can find it here on Foodnetwork.com. It’s so simple to do and if you use overripe bananas you will have a really flavored banana cake.
Ingredients for simple banana cake: 2 cups all-purpose flour 1 1/2 teaspoon baking soda 1/2 teaspoon salt 4 overripe bananas 1 cup sugar 3/4 cup (1 1/2 sticks) butter, melted and cooled 2 large eggs 1 teaspoon pure vanilla extract 1/2 cup pecans, finely chopped Confectioners sugar for dusting Preheat oven to 350°F/180°C and lightly grease a loaf pan or any other kind of pan. In a large bowl, combine the flour, baking soda and salt. Mash two of the bananas with a fork in a large bowl and add the sugar.
With an electric mixer mix for 3 minutes at high speed, until you have a light and fluffy banana cream.
Add the melted butter, eggs and vanilla and mix well.
Mix in the dry ingredients just until well incorporated.
Mash the remaining two bananas with a fork. Fold in the mashed bananas and chopped pecans (you can use walnuts too) with a spatula.
Pour the butter into the prepared pan and bake for about 1 hour and 15 minutes (for me 1 hour was just fine). Bake until golden brown and a toothpick inserted in the center comes out clean.
Cool the bread in the pan for 10 minutes and than turn out onto a wire rack to cool completely before slicing. The banana flavor defeated me and I just couldn’t stand it… so I just ate a great warm slice
