BB Blue Cheese Souffle

I missed the first BB recipe this month. I realized that I hadn't checked to see what was on tap for this month til like 2 days before the first recipe was due. Being that it was Cheddar Corn Chowder, it's probably a good thing. My hubby has this issue with eating soups when it's not cold outside. He pretty much refuses, and if I do make something soupish he grumbles. I know it's technically fall, but it's still been just a bit warm here in San Antonio, TX. So, anyways...

I was a little nervous about making a souffle, I don't think I've ever made one before. I've heard horror stories of them falling and being complete disasters. The cardinal rule for souffle making: DO NOT OPEN THE OVEN!!!!! I figured this being a cheese souffle with blue cheese as the star, it was for sure worth a shot.



As you can tell, by the demolished remains we liked it... A LOT! I really wish I had remembered to snap a pic before we tore into it. This thing puffed up BIG, I'm talking a good 3-4 inches over the dish! I didn't have quite enough blue cheese, so I tossed in a bit of feta too. I also added an extra egg yolk, by mistake, but it didn't seem to have an ill effect. While I did serve this for dinner (paired with a spinach salad with warm bacon vinaigrette), I think I would save it for breakfast next time and maybe play around with different cheese. I'm a little obsessed with goat cheese right now and think that would be fab!
