Prepare the soft-boiled egg:
Boil water in a saucepan, add the eggs, and cook for 5 minutes. Remove from water and transfer to a bowl of very cold water to stop the cooking.Cut the avocado into slices and the croissant in half.
Place the baby spinach leaves on the bottom of the croissant. Add the slice of smoked salmon.
