- Heat oil in a pan and add cumin seeds. When it starts to splutter, add green chilli and curry leaves.
- Add onions and fry till it caramelizes. Now add turmeric powder, red chilli powder and add tomato. Fry till tomatoes become tender.
- Now add carrots, salt and fry it till carrot gets cooked. Sprinkle water if needed to cook the carrots.
- Garnish with cilantro and keep aside.
- Toast the bread and spread this mixture and make sandwich.
