Cut the avocado into strips. Beat the eggs with salt and pepper and cook them in olive oil for a few minutes. Grill the bacon. Cut the tortilla in half up to the middle.
Place the cut side down. Add the avocado at the bottom left and the scrambled eggs at the top left. Top with the grilled bacon.
Add lamb's lettuce at the top right and the cheese slices at the bottom right.
Fold the filled tortilla: fold the avocado side over the scrambled eggs and bacon side.
Then fold it over to the lamb's lettuce side, and finally fold it down to the cheese side.
Place the wrap in a hot grill and grill for a few minutes until golden brown.
Remove from the grill and it's ready! Perfect for brunch :D
Observations
Feel free to fill your wrap with your favorite ingredients: all combinations are possible!
Change things up by using a different tortilla: for example, try a corn tortilla.
Cooking time will depend on the power of your grill. Remove the wrap when it is grilled.
You can also try this recipe with buckwheat galettes, crepes, or even in a sushi version with nori (of course, the filling will be different: raw fish, seasoned rice... for an original onigiri. No cooking required!)
