Let's do the tortilla challenge ! We made a whole brunch and wrapped it in a tortilla ! Follow our step by step recipe ↓

- Cut the avocado into strips. Mix eggs with salt and pepper and cook them in olive oil and mix continuously with a spatula. Grill the bacon. Take a knife and make a cut from the middle of the tortilla down to the edge.
- Divide your tortilla into four quarters. Put the avocado at the bottom left and the scrambled eggs at the top left. Put the bacon slice on top of the eggs.
- Put lamb's lettuce at the top right and the cheese at the bottom right.
- Fold your tortilla wrap starting from the bottom left quarter (avocado), folding it up over the top left (scrambled eggs + bacon).
- Then fold it over to the top right (lamb's lettuce), then fold it down to the bottom right (cheese).
- Grill in a panini press until crunchy.
- Remove from the panini press and brunch is ready !
Observations
You can make this recipe with your own ingredients.
Do not hesitate to try other combinations like with a buckwheat galette, ham, cheese and eggs... or a cold sushi version with nori, rice, avocado cheese and salmon... everything is possible !
