Let's do the tortilla challenge ! We made a whole brunch and wrapped it in a tortilla ! Follow our step by step recipe ↓

Cut the avocado into strips. Mix eggs with salt and pepper and cook them in olive oil and mix continuously with a spatula. Grill the bacon. Take a knife and make a cut from the middle of the tortilla down to the edge.
Divide your tortilla into four quarters. Put the avocado at the bottom left and the scrambled eggs at the top left. Put the bacon slice on top of the eggs.
Put lamb's lettuce at the top right and the cheese at the bottom right.
Fold your tortilla wrap starting from the bottom left quarter (avocado), folding it up over the top left (scrambled eggs + bacon).
Then fold it over to the top right (lamb's lettuce), then fold it down to the bottom right (cheese).
Grill in a panini press until crunchy.
Remove from the panini press and brunch is ready !

You can make this recipe with your own ingredients.
Do not hesitate to try other combinations like with a buckwheat galette, ham, cheese and eggs... or a cold sushi version with nori, rice, avocado cheese and salmon... everything is possible !
