Black Beans and Corn
Black beans and corn are probably the best combination, even better than rice and beans. I love the sweetness of the corn with the starchiness of the beans. Such a great flavor profile. Tonight I made the Mexican bake that I had made about a month ago. This time I made the cornbread more of a crust on top then bread on top. I did that by omitting the flour and adding a bit more corn meal instead. I also ommitted the beef (meatless Monday!) this time around and skipped the tomato sauce. It made it a bit less heavy and more light for a summer meal. We both enjoyed it.
After dinner I got to work making pickles and pickled beets. I am excited to see how they turn out, but I will wait until tomorrow to give them enough time to "pickle." The beets were messy and a bit of work to boil them and peel them afterwords. But if they taste good, then they'll be worth it.
