Butter Beans and Greens Sandwich
Good Afternoon! Today has been a great day so far and I can't wait to share this awesome sandwich recipe with you. I had a great 45 minute run and then had my first personal training session with my new client at Hill Country Fitness. She is awesome, just like all my clients... I really am blessed. I have met so many nice people and love the work I do. Yes, it is one of those days.... I am filled with Gratitude for all the things that I have and am able to do. So with a positive attitude, I inserted the P90X Ab Ripper DVD, that another client gave me to try out and I worked through 11 different ab exercies with 25 reps each. I freaking LOVED it! It was tough but fun and I want to incorporate some of the moves into my class tomorrow. I am also intrigued by the whole dvd series and might have to pop for it-- if anyone has the P90X series.... let me know your thoughts. I am always looking for new ideas and exercises to incorporate into my classes and into my own routine. So... onto the sandwich! As you may know, I am a huge fan of The Flexitarian Diet Book and have been flipping through it again for new ideas and this one looked really interesting to me, especially since I have that wonderful Panera Bread- Whole Grain Miche Loaf, that needs to be eaten. There is a similar recipe on her website for Fried White Beans and Garlic Greens Baquette that looks amazing as well. Butter Beans & Greens Sandwich 1 Tablespoons olive oil ? split 1/2 of butter beans, rinsed and drained 2 cloves garlic, minced 1 teaspoon of crushed red pepper flakes 2 cups rainbow chard, sliced into small, bite sized ribbons 1 tablespoon of Balsamic Vinegar 2 slices Whole grain Miche Bread DIRECTIONS Heat 1/2 T oil in skillet and pan fry butter beans until crispy on edges (gently toss)about 6-8 minutes. Set fried beans aside In same skillet, add 1/2 T oil, garlic and red pepper flakes. Sauté 1-3 minutes. Add greens to skillet. Sauté about 8 minutes until wilted & tender. Top bread with greens and beans Sauteed Rainbow Chard Pan-Fried Butter Beans on bed of greens and then drizzled with Balsamic Vinegar. Wow! This is one amazing sandwich. I loved it! It is loaded with texture and the pan fried beans are slightly crispy and creamy at the same time. It actually has a lot of depth to it... the spicy greens, layered with the crisp and creamy beans topped off with the sweet and tangy balsamic vinegar is simply delicious. I really want to go to one of Dawn Jackson Blatner's cooking classes in Chicago sometime. We used to live right around the corner from The Chopping Block and that would have been so much fun to have gone one of her classes. Another winner from The Flexitarian Diet Book. So far another great day of good eats and am going to plan out the rest of my day so I keep on track! I am thinking about a healthy dessert for tonight... maybe something with a banana... does anyone have any favorite little treats they like that are low- cal? Please share.
