Chickpea Cutlets / Pumpkin Oatmeal
![]() Did anyone watch The Biggest Loser last night? I did and my favorite part was when Bob Harper, who is now a vegan, took the contestants that had fallen below the yellow line to his house for dinner. Bob had a vegan meal prepared for the them that looked delicious?.YAY Bob!!! There?s no telling how many people watch The Biggest Loser, so I loved that all the viewers got to see a delicious vegan meal and hear a little bit about it from Bob. I have to admit, as I was watching those colorful veggies being eaten by the contestants, I was wishing I was there. The vegan diet is getting recognized more and more every day! :O) My dinner last night was no comparison to the vegan meal that the contestants had on The Biggest Loser, but it was delish! I've been wanting to try the chickpea cutlets that The Shenandoah Vegan makes, so I finally went for it last night. I can?t help but wonder?.what took me so long to make them? They are way better than I expected! I don't really know what I was expecting, but they were YUMMY! I'll let you in on a little secret too....my husband kept eyeballing them...... saying "they looked good", but he never did try them. At least he was looking...right? I used the same recipe that Shen uses from chow.com. I did make a couple of changes though. I didn't have plain bread crumbs, so I used some Italian Wheat bread crumbs that I had. I used a tablespoon of garlic powder instead of the 2 cloves of garlic, and I left out the sage, because I didn't have any. Oh, and I was out of vegetable broth too, so I used water. This recipe is ranking up there as one of my favorites! BTW, I stole my husbands camera last night to take the picture of my food. It takes a much better picture. :O) I think he needs to share since I got it for him for his birthday back in August..don't you? ha ![]() I had oatmeal for breakfast this morning, but didn't get to take a picture of it. I cooked about 1/4 cup of oatmeal with some almond milk (I didn't measure it...sorry), 1/8 teaspoon of cinnamon, and a sprinkle of ginger. After I took my oatmeal out of the microwave, I added about 2 heaping tablespoons of pumpkin puree. I don't particularly like using the microwave, but that's my only option at work. I could eat this oatmeal everyday! That's saying a lot coming from me, because I seem to have gotten burned out on oatmeal already. Pumpkins just seem to make everything better! :o)
