Chocolate and Lime Ice Cream

I was on a role with the banana ice cream and wanted to make an alternative so i made a Chocolate and Lime flavoured ice cream! Again its dairy free and based loosely on one from Gluten Free Goddess
I used almond milk and coconut milk in this recipe, but you could easily use rice milk if you prefer it. For best results, make the chocolate mixture ahead of time and chill it till it is good and cold.

1 cup coconut milk
1 cup organic golden brown sugar or cane sugar
1/2 cup unsweetened cocoa powder
4 oz. dark chocolate, chopped ( i actually used semi sweet drops)
1/8 teaspoon sea salt
1 cup cold almond milk
juice of 1lime

Heat one cup of coconut milk in a saucepan till good and hot. Remove from heat. Add the brown sugar and cocoa powder and whisk to dissolve. Add in the chopped dark chocolate. Stir until the chocolate is melted.

Add the sea salt, lime juice and almond milk. Whisk to combine.

Cover and chill until the chocolate sorbet mixture is very cold. The colder the better. (I let mine chill overnight.)

Pour the cold mixture into a large blender or Vita-Mix or one of those hand held blender thingies (thats what i used and yes thats the technical term for it! lol) and whip briefly till frothy; then pour it into the frozen ice cream maker canister and churn according to the manufacturer's instructions for your particular make and model. I made mine by hand, and by that i mean freeze until sides are hard and then whisk it up again and then place it back in the freezer and repeat. I repeated about 5 times and then left to chill over night.



This kept melting really fast! So as i scooped it out to take perdy pictures-it was melting! But still, you get the idea.
I really liked the combination of the lime in this one but i omitted putting some lime zest in it because my husband to be doesnt like limes! You could only get a hint of after taste of lime because the chocolate was so rich tasting. So if you did want a lime-ier tasting ice, then i'd suggest adding more juice or maybe some zesssssst!


I suppose this could've easily been a milkshake! It looks like one!
