Chocolate Covered Coconut Macaroons
This is really easy recipe for Chocolate Covered Coconut Macaroons. No need for mixer, no sweetened condensed milk. All you need is basic ingredients from your fridge and pantry.
Preheat oven to 285F. Grease and line a cookie sheet. In a small pan combine egg whites, sugar, honey and half of the shredded coconut. Mixed together. On a medium heat heat up the mixture slightly while stirring. Do not let it get hot or boil. Take it of the heat and stir in the rest of the coconut, flour and lemon rind. Use two teaspoons to spoon little heaps of dough onto the cookie sheet. Bake for 25-30 minutes.
