Chocolate Mint Brownies
It’s really warm here today, but like a fool I fancied doing some baking. So with the kitchen door and windows wide open, I began… I wanted to put a twist on a classic. I decided on brownies, and my first idea was to add chilli and grated lime peel. But I didn’t have a fresh lime…so – that’s for next time. I did have some peppermint flavouring, and like the combination of chocolate and mint flavour anyway, it seemed a good reason to go for it. Very easy to make, even nice to eat! Ingredients 170g self raising flour 1/2 tsp salt 3 tbsp cocoa powder 170g caster sugar 5 tbsp sunflower oil 230ml soya milk 1/2 tsp peppermint flavouring 1/2 tsp vanilla essence icing sugar, for dusting. Method Firstly, heat oven to 180c/350F/Gas Mark 4 1. In a bowl, mix flour, cocoa powder, salt and sugar. Make a well in the centre. 2. Add oil and milk into the well and mix all ingredients together. 3. Add peppermint flavouring and vanilla essence and mix again. 4.Line a n 8″ square cake tin with baking parchment. Pour mixture into tin and bake for 25-30 minutes. 5. Allow to cool in the tin for 10 minutes before turning out, removing baking parchment and placing on a wire rack. 6. When cool, dust with icing sugar and cut into squares. Filed under: Cakes and Cookies
