Okara oat cookies with chocolate

After making homemade oat milk, you are left with blended and soaked oats. Don't throw this away! It's called Okara, and you can use it to make delicious cookies! Follow our step-by-step recipe for a gluten-free treat :-)

- Mix the okara, sugar, almond meal, and egg.
- Add the melted coconut oil and mix well.
- Scoop 1 Tbsp of dough, form into balls, and flatten to make cookies. Place them on a baking tray lined with parchment paper.
- Bake for 15 minutes at 350°F (180°C).
- Once out of the oven and cooled, melt the dark chocolate and drizzle it over each cookie using a teaspoon. Let them rest for about 5 minutes for the chocolate to set, then enjoy! Bon appétit :-)

Ensure the cookies are cooled before adding chocolate.
