Shortbread dough:
Combine soft butter, sugar, salt, and vanilla extract. Add one egg and mix.
Add the flour in batches. Start with a whisk and finish by hand.
Wrap the dough in cling film: form into a ball and flatten. Chill for 15 minutes.
Roll out the dough on a floured work surface. Cut into 3.5 x 1.5 inches (9 x 4 cm) rectangles.
Add small strips (0.2 x 3.5 inches or 0.5 x 9 cm) to the top of the pastry rectangles, pressing them down to stick.
Bake for 10 minutes at 350°F (180°C), then leave to cool completely.
Caramel:
Melt butter. Add sugar and stir. When the mixture boils, add condensed milk.
Stir for about 10 minutes, until lightly browned.
Fill the inside of the cookies with the caramel. Chill for 15 minutes. Fill the inside of cookies with melted milk chocolate and chill for 15 minutes.
