- Shortbread dough:
Combine soft butter, sugar, salt and vanilla extract. Add one egg and mix. - Add the flour in batches. Start with a whisk and finish by hand.
- Wrap the dough in cling film: form into a ball and flatten. Chill for 15 minutes.
- Roll out the dough on a floured work surface. Cut into 3.5 x 1.5 inches (9 x 4 cm) rectangles.
- Add small strips (0.2 x 3.5 inches or 0.5 x 9 cm) to the top of the pastry rectangles, pressing them down to stick.
- Bake for 10 min at 350°F (180°C), then leave to cool completely.
- Caramel :
Melt butter. Add sugar and stir. When mixture boils, add condensed milk. - Stir for about 10 minutes, until lightly browned.
- Fill the inside of the cookies with the caramel. Chill for 15 minutes. Fill inside of cookies with melted milk chocolate and chill for 15 minutes.
- And voila, your cookies are ready!
