I was craving chocolate and lots and lots of it. Well my new cookbook arrived and I quickly flipped to the desserts section and low and behold was a very chocolaty recipe just waiting for me to bake! There were just as good as the picture looked…chocolaty, soft, brownierific! I found this recipe in Tosca Reno’s Eat Clean Cookbook and they were great!

Ingredients:
1/4 cups (4 squares) best quality unsweetened baking chocolate
1/2 cups sucanat or rapadura sugar
1/3 cup unsweetened applesauce
3 egg whites + 2 whole eggs
1/4 cup espresso coffee or extra strong brewed regular coffee, cooled
1 tsp vanilla
1/2 cups whole-wheat flour
1/4 cup cocoa powder
1/2 tsp baking powder
1/2 cup unsalted walnut halves-I omitted
Directions:
Preheat oven to 350 degrees.
Prepare a 9 inch square baking pan with spray or line with parchment paper
Melt chocolate in a double boiler. Do not overheat, as doing so will cause the chocolate to curdle and burn.
When smooth, remove and let cool.
In a mixer beat sugar applesauce, eggs, coffee and vanilla. When well combined add melted chocolate and beat well.
Add in dry ingredients.
Add walnuts if using.
Pour into pan and bake for 30-3 minutes.
Remove from oven and let cool before cutting.
