250 g. Dark chocolate

110 g. Heavy cream (30%)

30 g glucose syrup

100 g. Flour

15 g. Corn starch

200 g. Unsalted butter

200 g. Wallnut

Sugar 100 g

sea salt to taste


  • Melt chocolate at 50°C. Chill, then mix with soft unsalted butter.

    Beat the egg yolks with the sugar in a thick foam, add glucose syrup, stir. In mix bowl combine: beaten egg yolks, starch, flour, cream.

    Stir until smooth. Beat whites to a thick foam, combine with minced walnuts and chocolate mass.

    Spread the tray with backing sheets: pour the chocolate mass into.

    Bake in preheat to 160c about 30 minutes. Sprinkle ready brownies with sea salt.
