Churros & Elephant Ears

My kids are taking spanish class.  It's an online homeschool course so I don't have to be really good at speaking spanish. I was able to help them with grade school spanish but now that 2 of them are in middle school, I'm not much help.









Then they had the assignment to find a recipe and learn the ingredients and practice it.  Now this was something I could help with!!





First we thought of obvious things that we had made before like enchiladas or tacos.  Not interesting enough they said.  So we started googling and they found churros!!  Now THIS sounded like fun!









So we printed the recipe and got started.  Everyone helped, make the dough, roll the dough, fry the dough and cinnamon and sugar them.  Oh, and we did look the words up in the spanish dictionary and said them in spanish.





These so rocked!  They didn't last long.  At. All.











Then of course there was one more recipe that caught their eye.  Elephant Ears.  We had only had one at the state fair.  Would the homemade ones be as good?? 





So we fried up a tortilla, cinnamon sugared it and ay dios mio, this was awesome!





I'm so glad I was able to help the kids with their spanish homework!  :-)







Churros

Adapted from Allrecipes



1 cup water

2 1/2 tbsp. sugar

1/2 tsp. salt

2 tbsp. canola oil

1 cup flour

Canola oil for frying

1/2 cup sugar

1 tsp. cinnamon



In a small saucepan, combine water, 2 1/2 tbsp. sugar, salt and 2 tbsp. oil. Bring to a boil and remove from heat.  Stir in flour until mixture forms a ball.  Remove from pan and allow to cool enough to touch.



Heat oil for frying in deep fryer or deep skillet to 375 degrees.  When you are able to handle the dough, roll into 2 in. strips about 1/2 in. thick and fry until golden. (about 4 - 5 minutes). It will vary depending on size.  Drain on paper towels. 



Combine 1/2 cup sugar and cinnamon.  Roll drained churros in cinnamon and sugar mixture. Devour.



Elephant Ears Recipe



Flour tortilla

Cinnamon/sugar mixture



Fry flour tortilla until desired crispness. I don't remember how long. Place on plate with paper towels, blot on both sides, then cover with cinnamon sugar mixture.
