Citrius Icing
I was able to salvage the icing, which is the recipe I will provide here. As for the flat belly cupcake part... don't bother. Get a good cupcake recipe elsewhere, and put this icing on it :) Ingredients 1 1/2 cups confectioners? sugar 5 - 6 Tbs orange juice (freshly squeezed is preferable) 1 tsp freshly grated orange zest 1/2 tsp lemon extract Directions Combine ingredients with a mixer (either a hand mixer or a Kitchen Aid standing mixer will do) Spread some of the glaze over each cupcake. It should be a bit runny. Let the cupcakes stand for 20 minutes before serving to let the icing can set up. Makes icing for 30 cupcakes Prep Time 15 minutes Rest Time 20 minutes
