Cluster Beans Curry/Gawar Ki Phalli/Goruchikkudu Curry/Kothavarangai Curry

1 lb/1/2 Kg Cluster Beans(Gawar ki Phalli/Goruchikkudu) 1 Small Onion chopped 5-6 Green Chilies Sliced 2 tsp Ginger-Garlic Paste 2 tsp Red Chili Powder/as desired 1 tsp Coriander Powder 5-6 Curry Leaves 1/2 tsp Cumin 1/2 tsp Mustard 1/2 tsp Udad Dal 1/2 tsp Methi/Fenugreek Seeds Salt to taste Cooking Oil as needed Method: Wash and cut the Cluster Beans into 1/2 inch pieces. Heat Oil in a Kadai/Non-Stick pan,add Udad dal,Cumin,Mustard,Methi and allow it to splatter. Then add the chopped Onions,Green Chilies and cook until the Onions are tender. Now add the Ginger-Garlic paste and fry for 8-9 secs or until the raw smell is gone. Then add chopped Cluster Beans,Salt,Coriander Powder,Red Chili Powder,Turmeric and some water to cook the Cluster Beans. Mix well,close the lid and cook in medium flame. Switch off the flame when the water evaporates or when the oil starts oozing out. At last garnish with Curry Leaves and Coriander Leaves. Serve with Hot Rice,Sambar/Dal Rice. Note: These Cluster Beans are rich in fiber,So make different curries with this vegetable.
