  • Destring each broad bean or tear into 2 inch pieces.
  • In a pressure cooker / pan heat oil and then add mustard seeds, cumin seeds and once they start to crackle add curry leaves followed by broad beans and tomatoes.
  • Mixin lima beans and corn. Add a little salt and turmeric, mix in and close the cooker lid.
  • Remove the cooker from heat just after one whistle. Once the pressure is gone, open the lid and cook under high heat until the curry gets required consistency.
  • Add red chilli powder and salt to your taste. Finish it off with loads of chopped cilantro.
