Cookie for breakfast
I need more sleep!! I know this. Monday, Tuesday, and Wednesday I pull off the 5-6 hours of sleep, but by Thursday I’m just about dead and Friday, I probably worthless. Does anyone else feel like today was 38 hours long?!?!? Sheesh! Got up this morning and met Kimmie at the gym at 6:30 6:38…..it’s Thurday, therefore, running late! Preworkout Fuel: The preworkout fuel that was consumed was definitely on the go today, due to running late. Handful of almonds and a rather tasty banana. Don’t forget my mug of coffee with 1 packet of truvia and skim milk Today, Kim and I did another Insanity dvd. Who cares if it was ONLY 45 minutes……I was dying!!!!!! I can’t wait to see what kinds of results we get from doing these dvd’s!!! Following our work out, I made a pit stop by Starbizzle for a much-needed Thursday morning pick-me-up. Cup of coffee with steamed skim milk and a truvia. Perfection in a cup. Hit work up for a few minutes to check in the eval that I was up waaay too late typing. Back home, I immediately began on breakfast. I decided on a breakfast cookie, inspired by Gina. I tweaked her original recipe a bit, the recipe I used this morning: 1/4 cup oats 1 egg white 2 tsp sucanat 2 tsp all-purpose unbleached flour 1/4 tsp vanilla extract 1/4 tsp baking powder 1/2 tbsp raisins 1/2 tbsp dried (and sweetened) cranberries cinnamon, to taste Add ingredient to a bowl, mix well Press mixture down into the bottom of the bowl and microwave 1 minute. I topped mine with all natural peanut butter and paired it with a pear. Delicious! I mean, come one, who doesn’t loooove “cookies” for breakfast?!?! Any thoughts as to what the future of this jar might hold?!?!? Oats in a jar, maybe?? Lunch: All my co-workers ordered lunch out today from Jason’s Deli. While I am a fan of Jason’s, since I had packed my lunch, I just went ahead and ate it. Pita loaf cut in half and filled with: pesto spinach feta cheese microwaved (frozen) mixed veggies/beans Gardenburger veggie burger Paired the overflowing pita’s with a plum and an unsweetened apple sauce. This was a very filling lunch! Snack: For snack, I was trying a new type of chip I swear I think I’m part Mexican. Paired 1 serving of this chips (10 chips) with salsa and 1/2 container of greek yogurt. Happy Cinco de Mayo to me…..one day late. Sooo yummy! Downfall of working with kids all day……. Candy is pretty much everywhere! These stupid orange slices are sooo good. If anyone ever finds a “clean” version of these……let me know!! Dinner: The hubs and I opted for dinner out tonight. We quickly decided on one of our favs….Cootie Browns. We’re such creatures of habit. I ordered the Caribbean Jerk pizza Yea it’s totally drool worthy, I know! How about now: You drooling yet???? The hubs and I started a Netflix movie 2 nights ago?? Maybe 3?? Gonna try to finish watching it tonight…as long as my very tired rear-end doesn’t fall asleep first. Night ya’ll!!!
