Creamy Scallion Soup
The recipe of this delicious blend of potatoes, scallions and cream I have it from my friend Guvi. Ingredients 2 bunches scallions 1 yellow onion 3 tbsp butter 1-2 potatoes 3 cups stock 1 1 /2 cups light cream lemon juice white pepper salt Directions
In a pot melt the butter, meanwhile chop the onion and scallions. Add to the pot. Cover and cook until onions are soft, about 7-8 minutes. Meanwhile peel and cut the potatoes. When the onions are soft add potatoes and stock. Bring to boil and simmer for about 30 minutes or until potatoes are cooked. Let soup cool slightly and process it in a food processor.
Return to pot, add the cream, pepper and salt to taste. Reheat the soup gently stirring all the time.
Add the lemon juice and serve in heated bowls garnished with chopped scallions.
