When you come home in the evening after a day in the rain and cold, the solution lies in dinner with this delicious leek, coconut, and curry soup! Cut the leeks and onion into slices. In a pot, heat olive oil and sauté the onions and leeks.
Season with salt, pepper, and curry, and sauté everything well before adding the coconut milk and letting it simmer for a bit.
Cover the leeks with water and let it cook for 30 to 35 minutes. Blend the soup at the end of cooking.
And there you have it! You can sprinkle the soup with peanuts and coriander.
