Leek, coconut and curry soup
An easy recipe that will warm your heart during cold days.

1 cup coconut milk (20 cl)
Coriander
Peanuts

Preparation
- Cut your leeks and onion into slices. In a hot pan, pour olive oil and cook the onions and leeks.
- Add salt pepper and curry and then the coconut milk. Let it simmer a bit.
- Cover the leeks with water and let it simmer during 30 to 35 minutes. Blend the soup.
- There you are ! You can add some peanuts and coriander on top of your soup !
