Chicken and leek soup (cock-a-leekie)

Ingredients

Number of serving: 4
8-10 pieces chicken legs, bone in

2 large white onions, chopped

2 carrots, chopped

2 celery sticks, chopped

2 large stalks leeks, sliced

1 small red capsicum, chopped

1 small orange capsicum, chopped

1/2 cup full cream

1 litre chicken stock

1 litre water

salt

freshly ground black pepper

1 teaspoon rubbed thyme

3 tablespoons butter

Preparation

  • In a pot add butter then add the chicken, brown it on all sides then remove from pot then set aside.
  • Add onions, celery and carrots then sauté until the vegetables sweat.
  • Add water, stock and chicken then bring to a boil simmer for 15 minutes.
  • Add the leeks and capsicums, simmer for additional 15 minutes.
  • Add full cream and thyme, season with salt and black pepper, turn heat off then serve.
