Deep Dish Covered Baker Rolled Up Chicken Dinner
SCARF Cannot even start to describe how fast this dinner went down the hatches of my kiddos. Usually I can save some of the left overs for lunch the next day... NOT WITH THIS DINNER! I think they may have even licked their plates. Besides tasting amazing it is like a dinner in one! Who doesn't like that? (said like Barefoot Contessa) I made this in the Deep Dish Covered Baker, but it can also be made in the oven. Enjoy! Rolled Up Chicken Dinner 4-5 Boneless Skinless Chicken Breasts, pounded to an even thinness1 1/2 C Prepared Mashed Potatoes, on the thick side, helps if they are chilled 2 C Steamed Broccoli, chopped into very small pieces, almost minced 1/2 C Shredded Cheddar cheese 1/2 C Flour 1/4 tsp Salt 1/4 tsp Pepper 1 Beaten Egg 1 1/2 C Bread Crumbs 1 Packet Ranch Dressing Seasoning Mix Preheat oven to 350 degrees if making it in an oven. Place pounded chicken breasts onto a large baking sheet. Spread a thin layer of mashed potatoes over each chicken breast then layer with broccoli and cheddar cheese. Carefully roll each chicken breast up securing ends with toothpicks. Place flour, salt and pepper into a shallow bowl. Place beaten egg in a second bowl and the bread crumbs and ranch mix into a 3rd shallow bowl. Dip/roll rolled chicken carefully into flour, then egg, then bread crumb mixture. This is a messy job! Any bits that have fallen out while rolling up the chicken? Just place them inside the Baker. they are yummy to scoop up and eat to! Place Chicken rolls seam side down into the Deep Dish Covered Baker and cook for 18-20 minutes. I just served this meal with a roll since it is pretty much a one pot wonder.
